sicilian orange salad

The Sicilian Orange Salad is a refreshing and vibrant dish that perfectly balances sweet, tangy, and savory flavors.


Made with juicy, fresh oranges as the star ingredient, it’s paired with thinly sliced onions, aromatic parsley, and a light drizzle of olive oil. This simple yet elegant salad is traditionally served as a light appetizer or side dish, and is ideal for bringing a burst of flavor to any meal. Its bright colors and fresh ingredients evoke the sunny essence of Sicily, making it a timeless favorite.

Oranges, like other citrus fruits, are a winter produce, and this is the season when they reach their peak in flavor and nutritional value.

SERVES 4


Ingredients


  • 5 oranges

  • 1/3 cup of black or green olives, pitted

  • 1/4 of a red onion

  • 1 tbsp of capers

  • 4 sprig of parsley

  • 1 tbsp of olive oil

  • salt and pepper to taste


Method


  1. Peel the oranges, removing the pith, and slice them into rounds. Arrange the slices on a large serving plate.

  2. Peel the onion, cut it in half, and thinly slice one half.

  3. Sprinkle the onion, the olives and the capers over the orange slices.

  4. Roughly chop the parsley leaves and sprinkle over the orange slices.

  5. Season the oranges with salt and pepper, then drizzle with olive oil.

  6. Cover the plate with plastic wrap and refrigerate for 1 hour to marinate.

  7. Take the plate out of the refrigerator 10 minutes before serving.
