Polenta crostini with sausage

An incredibly simple starter that will delight all fans of polenta!

MAKES 12 CROSTINI


Ingredients

  • 18 oz tube of precooked polenta

  • 2 Italian mild sausages (pork or turkey)

  • 1 tbsp of chopped parsley + extra for garnish

  • 1/4 cup of grated Parmigiano + extra for garnish

  • salt and pepper to taste


Method

  1. Preheat the oven to 350*.

  2. Unwrap the polenta and cut it into 12 slices 1-inch thick. Place the slice on a baking sheet.

  3. Remove the case from the sausage and place it in a medium bowl. Add grated cheese and 1 tbsp of chopped parsley. Season with a pinch of salt and pepper. Mix everything together using a fork.

  4. Top each slice of polenta with 1 tablespoon of the sausage mixture.

  5. Bake for 25 minutes. Remove from the oven and transfer the polenta crostini to a serving dish using a spatula. Sprinkle some grated cheese and parsley. Enjoy!
