Pistachio Olive oil pralines

Who loves pistachios? Well if you do, you cannot skip this recipe. Give it a try and keep a big stack of those barks in your refrigerator, ready to fix your chocolate and pistachio craving at any time of the day!


The recipe is very easy but it is always a big hit when I offer those treats to family and friends. You only need 4 ingredients and you can change the main protagonist, the pistachios, for any other type of nuts you love

The most important thing is that you remember to slightly toast the nuts you choose, it makes a huge difference!


Ingredients

  • 4 oz of dark chocolate (you can use chocolate chips or a whole bar, broken in small pieces)

  • 2 oz of shelled unsalted pistachio nuts 

  • 2 tbsp of raisins

  • 1 tsp of extra virgin olive oil

Method

  1. Place the pistachios (or your nuts of choice) in a large skillet pan on medium heat. Toast them for 1 to 2 minutes, watching them close. As soon as they start to give off a toasty fragrance, remove the pan from the heat and place the pistachio on a plate. 

  2. Get a chopping board and roughly chop both the nuts and the raisins. Set aside.

  3. Place the chocolate chips in a large microwavable bowl, and add the oil. Microwave for 30 seconds, then take the bowl out and stir the chocolate. Repeat the same operation a couple of times more, until the chocolate is completely melted.

  4. At this point, you can fold the nuts and raisins in the melted chocolate. Stir well.

  5. Line a baking sheet or a large plate with parchment paper.

  6. With the help of a spoon, scoop one spoon of the chocolate and nuts mix and place it on the sheet/plate. Repeat the same operation until you use all the chocolate mixture.

  7. Place the baking sheet/plate in the fridge and let it set for at least 30 minutes.

  8. Now enjoy! You can keep the pralines in the fridge or the freezer, they will keep well up to one month!
