Almond mini cakes from Molise

The Molisan almond cake is a delightful dessert that draws inspiration from a traditional regional recipe, showcasing the rich taste of almonds complemented by a zesty touch of lemon.

Almonds hold significant value in the Adriatic coast region of Italy, making them a common ingredient in recipes from Abruzzo and Molise.

This cake recipe stands out for the absence of butter, flour, and artificial additives, making it suitable for gluten-free and lactose-free diets.

Ingredients


  • 2 hyping cup of almond flour

  • ¾ cup of granulated sugar

  • 6 eggs, room temperature

  • 1 lemon (preferably organic)

  • 1/8 tsp of salt

  • 1/2 cup of sliced almonds


Method

  1. Start by preheating the oven to 350 F.

  2. Wash the lemon and grate the zest. Set the zest aside and then squeeze the juice, strain it, and place it in a separate bowl.

  3. Next, separate the egg yolks from the whites. In a large bowl, add the egg yolks, the sugar, salt, and lemon zest and whisk with an electric mixer at high speed for about 7 minutes or until the mixture becomes light and frothy.

  4. Slowly add the strained lemon juice to the mixture while continuing to mix with the electric whisk on low speed.

  5. Gradually incorporate the almond flour into the mixture, adding a couple of tablespoons at a time and ensuring each addition is fully mixed before adding more.

  6. In a separate large bowl, whip the egg whites until stiff peaks form.

  7. Gently fold the whipped egg whites into the almond flour mixture, using a spatula in a delicate motion from bottom to top.

  8. Prepare the muffin tins by greasing and flouring them or lining them with 12 muffin paper molds. Fill each muffin mold with the batter, smooth the surface, and sprinkle sliced almonds on top.

  9. Bake for 25 minutes without opening the oven to prevent the cakes from deflating. Test the muffins' doneness by inserting a wooden toothpick into the center of one: if it comes out dry, the muffins are ready. If not, bake them for a few more minutes.


Please note: muffin tins sizes can change, so feel free to adjust the number of mini cakes according to the size your mold.
